Grapes: Sangiovese 90% - Canaiolo, Trebbiano, Malvasia, Merlot 10%.

Origin: Tuscany - Monteriggioni (SI).

Vinification: soft pressing with maceration for 10-15 days.
Fermentation takes place with temperature control in order to preserve all the primary aromas characteristic of the grapes. After the first fermentation, the wine is re-fermented with the "governo alla Toscana" technique.

Alcohol content: 12.50% vol.

Free sulfur dioxide: 30 mg/lt.

Total sulfur dioxide: 110 mg/lt.

Volatile acidity: 0.55 g/lt acetic acid.

Total acidity: 5.60 g/lt tartaric acid.

Sugars: 1.60 g/lt.

Pairings: first courses, grilled red and white meats, stews and game.

Producer's notes: wine produced with grapes harvested exclusively from the vineyards of the "Le Gallozzole" farm, located in Monteriggioni (Siena) and owned by the Borghi family since 1999. It has a characteristic lively and intense ruby ​​red color, with reflections purplish during the year of production which over time tend to garnet.Pleasant, persistent, vinous bouquet with immediate references to red fruit such as cherries and black cherries.The taste is dry, fairly structured, soft and balanced.

Serving temperature: 18-20°C.
