Cru from Sangiovese grapes . The first wine of my project, born in 1995 after long massal selections on the old family vineyards, using Sangiovese plants that have always been present in my area and inserting the difficult technique of lymphatic interruption, hence the name RECISO, and from which it derives his particular personality.

BOTTLES PRODUCED: 7,000 GRAPES: Two clones of Sangiovese selected on the farm PRODUCTION AREA: San Miniato Tuscany

AREA: 2.0 hectares on a single vineyard on a high hill facing South-East

AGE OF THE VINES: 30 years

TRAINING SYSTEM: Spurred cordon. HARVEST PERIOD: First ten days of October.

NATURE OF THE SOIL: Calcareous white clays with a high PH with a skeleton formed by fossil shells from the Pliocene age.

ALTITUDE: 200-250 meters. asl

PLANT DENSITY: 7000 vines per hectare.

YIELD PER PLANT: 0.8 kg of grapes

VINIFICATION: In cement, with indigenous yeasts and maceration on the pomace for five weeks.

MATURATION: In Slavonian oak barrels for 24 months. REFINING: 12 months in the bottle TIPS: Store the bottle horizontally in the dark at no more than 20°. Uncork at least one hour before consumption.

PAIRINGS: Braised meats, stews, furred game, aged cheeses. Steak

ORGANOLEPTIC NOTES: Colour: Very deep garnet ruby ​​red Bouquet: Intense vigorous of wild berries and ripe red fruit blended with hints of leather, barley, coffee Taste: Dry, austere, with very intense tannins and a typical bitterish finish, reminiscent of chocolate fondant.
